Hurst Family Harvest Tri-Bean Soup Recipe and $25 Publix Gift Card Giveaway

Well, I can’t think of a better way to get coupon chaos back up and running than with a fabulous, healthy, budget friendly fall meal as well as a little giveaway! This month Hurst Family Harvest Products have been on sale for $1.99 at Publix.  Their soups are filling and make for a perfect family dinner, especially as the temperatures are starting to cool down a bit.  I chose to make their Homestyle Tri-Bean soup and I went the vegetarian option.  I’ll admit, I was a little skeptical about the time for soaking the beans, but it was really a no brainer.  The house smelled fantastic all afternoon as the soup simmered.  I made a batch of blueberry quick bread to go with it (corn bread would also be a great choice) and it was a super simple meal that everyone (even my toddler) gobbled right up.

Here’s what you need (both for a veggie or non-veggie option)

1 package Homestyle Tri-Bean Soup
2 tbs. olive oil
1 cup chopped onion
2 cloves chopped garlic
1-2 ham hocks, or 1/2 lb. diced ham (omit for veggie option)
1 can diced tomatoes
Juice from 1 lemon

Instructions:

Rinse and sort through the beans. Pour beans into a large bowl or pot and cover with 2 inches of warm water. Allow beans to soak over night or at least 4 hours(I did the four hours and it was great!). Drain and discard water.  Add olive oil to a large soup pot over medium-high heat. Sauté the onion and garlic for 5-6 minutes until onion becomes translucent. Add 7 cups of water, ham, and rinsed beans. Turn the heat to high and bring mixture to a rolling boil. Stir periodically.  Reduce the heat to low and cover the pot. Simmer (covered) for 60 minutes.  Uncover and remove the ham hocks. (Trim ham off of bone and return to pot).  Add tomatoes to the pot. Continue to simmer for 15 minutes.  Check beans for doneness. If fully tender, add lemon juice and contents of seasoning packet.  Simmer for additional 10 minutes before serving.

A Few other cooking tips from Hurst Family Harvest:

  • For thicker consistency, use 5-6 cups of water or stock
  • Tastes great with your leftover Christmas or Easter ham!
  • Add other garden and root vegetables for an even heartier dish
  • Add 1 tbsp. of chili powder for a little extra zip!
  • Leave out the ham for a delicious vegan dish!

We have decided not just for health reasons but for financial reasons to eat more at home. We are trying new things and adding Hurst beans have been a huge hit!

My family does not work around the “meat” as the main course starting point for a meal idea. Instead we buy produce and fresh veggies, and work around those. BEANS are a huge, easy way to stay on track! I love the fact that you share this recipe! YA-HOO! :) As for as learning more about healthy choices, I would love to learn much more about getting our protein sources from other products besides MEAT, beans, and animal protein. ;)

I would love to learn more about cooking meat free. I do bean and pasta dishes often but would love to have more recipes for meatless dishes so I can switch it up some! :D

We visit my local produce market every Tuesday when they offer a 20% discount! We get better-tasting local produce at AMAZING prices. I have also bought veggies that were too cheap to pass up there, steamed, and then pureed them. After making the puree, I freeze the liquid in ice cube trays and add the cubes to sauces and soups. My family doesn’t taste the difference and I love that I’m adding extra vitamins!

I am not a vegan or vegetarian, but I would love to learn how to make delicious dishes that focus maily on vegetables. Especially winter vegetables.

(Summer is easy with all the varieties of salads.)

Since we lived in South America for many years I learned to cook most everything from scratch. I still do most of my cooking that way today because I feel it is the best way to know what I am putting into my meals. Just made a delicious South American meal with a sauce made with green plantains and peanut butter sauce.

The easiest way we started cooking on a budget and trying to be healthy is eating all meals at home. We have football 3 nights a week and found ourselves getting the kids fast food a lot, now I just plan ahead and make them each a meal to go, saves money and has to be healthier then fast food!

I always throw some vegetables in the processor and add to the soup, especiallythe pea soup at Easter with the ham, carrots and potatos are a great addition.T love these soups!

HI…good luck with your cool new site…referred from I Heart Publix.
We also tend to eat on the healthier side therefore, do use so many of the coupons. I would love to know how to find more Flavorful and Healthy options for making sauces and gravies…I hate bland food. I do use herbs/spices/chicken stock but in need of something more! Thanks

At my house, we take advantage of the produce sales, as well as the deals on frozen vegetables. This week, the Eat Smart veggies for $1 each will likely be a part of our nightly meals.

PS – I made the recipe above this week (I used the diced ham that was on sale 2/$4, and instead of lemon juice, I used a tablespoon of red wine vinegar) and it was a hit! Good stuff!

To stay on budget I shop the sales and hopefully with coupons and try to plan our meals around those. Also watch as items are being rung up at Publix…today I got a 3lb of organic apples for free because they rang up differently than they were priced. :) Doesn’t happen often but I sure get giddy when it does.

This soup sounds awesome…going to give it a try!
To make healthy choices on a budget, I simply shop for items that are on sale and I have a coupon for, from there I make my weekly menu, and most of the time I put everything in the crock pot before I leave for work so when I get home, it is ready to eat….did you know you can cook almost anything in your crock pot? my family doesn’t eat w hat are called healthy take-out options, we instead eat our home-made meals . Tastes great and not nearly as expensive. ( I had to repost this because my other one did not go through.)

I try to make healthy choices on a budget by shopping for sale items that I have coupons for then plan my weekly menu from that…I usually put my meal in my crock pot (on low) before I go to work, so when I get home we can eat and enjoy more family time. Did you know you can cook almost anything in the crock pot? Yes, you can…that’s why I have 5 of them!!! :-)

I like to use very lean beef or pork in my meals…I will find roast on bogo or better yet markdown and ask the butcher to slice it or grind into hamburger…I get 100% lean meat to use in recipes…use that butcher…he’s the expert and its his job.

We changed our diet last year and cut out all meat (other than seafood/dairy) so it’s helped us to make healthier choices. I have found that I spend about the same amount as I did when we ate meat because I buy more organic items but our diet is so much better for us. I also watch the sales and buy fruits/veggies according to what’s on sale.

buy meats on sale and stock up. save that way and check out what is on sale on vegetables both frozen and fresh. that will help with budgets.

To save money and eat healthy I use ground turkey in recipes that have a lot of seasoning like chili or tacos. You have to cook it a little slower, but the price of ground turkey is less than ground beef at Walmart. Since I don’t care for Walmart’s ground beef, that makes it an even better choice for me.

I love the thrill of getting a good deal! I clip coupons and watch for deals on everyday products. Coupons such as this allow me the opportunity to try new products. This frees-up money to spend on healthy choices like fruits and vegetables. We also fish and scallop for fresh seafood.

I do not buy more than we can use. The produce associates will repackage items into smaller amounts if needed, or I make sure to freeze, and find a way to use, leftover amounts. Small leftover amounts of beans, meat, peppers, etc can make a good pizza, soup, or nacho toppings.

I love the bean soup recipe. We have it with cornbread.

I would like to know more about how to figure out calories, sodium, etc from homemade casseroles. I need to cut back on fats and sodium and love the casseroles but how do I keep my nutrition in mind when I’m planning on homemade meals.

We paired this deliciously awesome soup recipe with Cuban sammies made with slow cooker pulled pork tenderloin this week for dinner.

Just last week I participated in a webinar lead by Robyn O’Brien, hosted by Stonyfield. She spoke about eating organic foods and staying away from additives in our foods, such:
-artificial colors and dyes, red 40, yellow 5
-aspartame
-preservatives
-artificial growth hormones
-genetically modified proteins
-exceeding levels of pesticides
My husband and I were somewhat organic conscious, by drinking organic milk, shopping at our local farmer’s market on occasion, and buying organic beef. We also coupon, so we focus on buying foods that are bogo at Publix. Sometimes organic and all natural foods are on sale, but not always. After participating in the webinar, my husband and I are now on a mission to eat organic and to put good foods into our bodies. We want to do it on a budget and to try to save as much as we can through buying foods on sale and using coupons, but now focusing on organic, all natural, and healthy foods. I make the 15 bean cajun (not so spicy) or regular soup all the time, follow the instructions on the back of package. Along with the beans I put in garlic, onion, carrots, diced red and green peppers and Italian sausage. Top with grated parm cheese. Could also put some pasta in there or any veggies you like. I make in the crockpot and so inexpensive for a whole crock. YUMMY!

One way we eat healthy on a budget is by making a lot of stuff ourselves. For instance, I make my own bread, chicken stock, salad dressings, etc. This saves a lot of money compared to the cost of the healthier storebought varieties!

I keep my eye on bogo sales at Publix and make out my menus based on those and their other weekly specials. That’s how I found Hurst Harvest Bean soup in the first place. It’s a great way to give your family a nutritious and delicious meal on a budget!
